Mother’s Day is right around the corner.  Time to raise a glass to the woman who sang you to sleep, survived through your terrible 2’s, drove you to every practice, cheered you at every game, bandaged and kissed every scrape, and will love you unconditionally.  Although she may never stop worrying about you, this Mother’s Day don’t let her worry about breakfast! What better way to show appreciation for mom than through a homemade breakfast made by her kids? Skip traditional pancakes and French toast and whip up something as colorful and unique as she is: Breakfast toasts! Easy for even the most novice of chefs or the littlest of hands to assemble.

Step 2: Boost up with hearty filling!  Good choices include:  Eggs, Hummus, Avocado, Natural Nut/Seed Butters, Greek Yogurt, or Light Cream Cheese (flavor of choice)

Step 3: Top it off!  Fresh Fruit, Leafy Greens, Chia/Flax Seeds, Nuts/Seeds, Chocolate Chips, Fried Egg, Hot Sauce, Herbs & Spices, or Jelly/Jam

Partner with fresh coffee and flowers to brighten her morning.  Bonus points for cleaning the kitchen when you’re done . . . After all, Mom is the toast of the town!!
